Fresh Fruit Flan
- 1 pkg (4-serving size) Jell-O Vanilla Instant Pudding
- 1 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 9 inch (23 cm) store bought cake flan
- 3 cups sliced fresh fruit and berries Whole Foods 3 For $10.00 thru 02/09
- 1/3 cup apricot jam
- 1 Tbsp. water
- sliced almonds, toasted
- PREPARE pudding according to package directions, reducing milk to 1-1/2 cups (375 mL).
- Stir in lemon juice.
- Let stand 5 minutes.
- Spread evenly over flan.
- ARRANGE fruit on top of pudding.
- HEAT jam and water over low heat until melted; sieve.
- Cool slightly and brush or spoon over fruit.
- Garnish with almonds.
- Chill 30 minutes.
