Butternut Squash & Red Pepper En Casserole

  1. Preheat oven to 400.
  2. Cut squash into 2" slices crosswise, working with each slice peel and seed.
  3. Cut in to 1" cubes.
  4. Combine all ingredients in large bowl except Cheese.
  5. Transfer to 2 1/2 quart gratin dish or shallow baking dish.
  6. Sprinkle with parmesan.
  7. Bake 1 hour till top is golden and squash is tender.
