Linguine with Fava Beans, Peas and Mint
- 1 cup shelled fava beans
- 1 cup frozen peas
- 1/2 lb. linguine, uncooked
- 1 cup POLLY-O Original Ricotta Cheese
- 6 Tbsp. KRAFT Grated Parmesan Cheese
- 1/2 tsp. freshly ground black pepper
- 1/4 cup chopped fresh mint
- Cook beans and peas in boiling water in large saucepan 2 min.
- Remove beans and peas with slotted spoon; plunge into ice water.
- Drain; set aside.
- Cook pasta in same pan of boiling water as directed on package, omitting salt.
- Drain, reserving 1 cup cooking water.
- Mix cooking water, ricotta, Parmesan, pepper and mint in medium bowl until blended.
- Toss hot pasta with ricotta mixture, beans and peas.
