Linguine with Fava Beans, Peas and Mint

  1. Cook beans and peas in boiling water in large saucepan 2 min.
  2. Remove beans and peas with slotted spoon; plunge into ice water.
  3. Drain; set aside.
  4. Cook pasta in same pan of boiling water as directed on package, omitting salt.
  5. Drain, reserving 1 cup cooking water.
  6. Mix cooking water, ricotta, Parmesan, pepper and mint in medium bowl until blended.
  7. Toss hot pasta with ricotta mixture, beans and peas.
