Smoked Red Wine Pork
- 2 lb country style pork ribs
- 1 cup dry red wine
- 1 cup soy sauce
- 1/2 cup apple cider vinegar
- 1/4 cup lemon juice
- 1 tsp dried mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup ketchup
- 2 tbsp molasses
- 2 tbsp brown sugar
- 2 tbsp worcestershire sauce
- 2 tbsp apple cider vinegar
- 1 tbsp yellow mustard
- 1 tbsp lemon juice
- 1/2 tsp season salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Mix marinade ingredients and marinate country style pork ribs overnight.
- Set up your grill with a 3 zone fire.
- (add a double thick layer of hot charcoal on the back 1/3 of the grill, a single layer of hot charcoal in the middle 3rd, and a drip pan in the front).
- Mix bbq sauce ingredients and refrigerate until needed.
- Places marinated pork on your grill over the drip pan.
- Add the marinade liquid to the drip pan.
- Add a handful (or 2) of wet hickory wood chips directly to the hot coals and smoke for about 1 hour.
- Flip pork about halfway through.
- After smoking glaze with bbq sauce and cook for about 10 minutes.
- Flip over and glaze agaiFlip overq sauce and cook an additional 10 minutes.
- Let rest for about 10 minutes before serving and serve with extra BBQ sauce.
