Date Squares
- 2 cups rolled oats
- 2 cups flour, all-purpose
- 1 cup vegetable shortening
- 1 cup brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup sour milk
- 1/2 cup dates chopped
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 1 cup water hot
- To make the date Filling:
- Add the dates, brown sugar, cornstarch, and water in a small saucepan, cook until thick, stirring constantly.
- Remove from the heat and set aside.
- To make the batter and assembling:
- Mix the first five ingredients together thoroughly.
- Dissolve soda in the sour milk, add to other ingredients and mix well.
- Put half mixture in pan and cover with date filling.
- Put rest of mixture on top and press down.
- Bake in 350F (180C) oven for 25 min.
- Cool completely on a wire rack, then cut into the squares.
