Rum Pecan Pie Recipe
- 3 Large eggs
- 1/3 c. sugar
- 1 c. light corn syrup
- 1/4 c. melted butter
- 1/4 c. light rum
- 1 teaspoon vanilla
- 1 c. minced pecans
- 9" unbaked pie shell
- 20 whole pecans
- Whipped cream for garnish
- Preheat oven to 375 degrees.
- In large mixer bowl combine first 6 ingredients and beat 3 to 4 min.
- Mix in minced pecans and pour into unbaked pie shell.
- Place whole pecans on top in circular pattern.
- Bake pie 45 min.
- Remove from oven; cold.
- To serve, garnish with whipped cream.
- Serves 6 to 8.
