Farmer's soup
- 8 cup chicken stock
- 1 lb beans I use a 10 bean mix for sprouts
- 1 lb smoked turkey meat is optional
- 1/2 tbsp paprika
- 1 bell pepper diced
- 3 large carrots sliced thick
- 1 large onion, chopped
- 2 medium potatoes, chopped
- 2 large zucchini, halved and sliced into 1 inch thick chunks.
- 2 large tomatoes, diced
- 3 cup spinach
- 1 tsp onion powder
- 1 tbsp garlic powder
- 1 tsp savory
- 1 1/2 tsp chopped parsley
- Add 2 cups water, chicken stock and tomato to 1 lb of beans in a large pot.
- Bring to boil then reduce heat to low.
- Cook for 2 hours.
- After the 2 hrs are up.
- add all your veggies except the spinach.
- Add seasonings.
- Simmer on low for 45 minutes.
- Add the spinach and simmer for 15 minutes.
- Taste your broth and add salt and black pepper.
