Stuffed Peppers
- 6 whole Bell Peppers
- 1 pound Ground Beef
- 2 Tablespoons Chopped Onion
- 1 cup Cooked Rice
- 1 cup Corn Kernels
- 1 teaspoon Salt
- 1 clove Garlic, Finely Chopped
- 3/4 cups Shredded Cheese
- 1.
- Preheat oven to 350 degrees.
- 2.
- Hollow out bell peppers, removing seeds and membranes; rinse.
- If desired, cook peppers in boiling water.
- 3.
- Cook beef and onion in a skillet over medium heat for 8 10 minutes, stirring occasionally until beef is brown; drain.
- Stir in rice, corn, salt and garlic; cook until hot.
- 4.
- Stuff peppers with the beef mixture plus some of the cheese, if desired.
- Stand peppers upright in an ungreased square baking dish.
- 5.
- Cover peppers and bake for 45 minutes.
- Uncover, add more cheese, and bake 15 minutes longer until peppers are tender.
- Note: if preferred, you may eliminate the garlic and onion.
- You can also add tomato sauce if desired.
