Peach Sweet Potato Puffs Recipe
- 2 lg. sweet potatoes
- 2 tbsp. brown sugar
- 1/4 teaspoon salt
- Dash grnd cloves
- 1 teaspoon lemon juice
- 2 tbsp. butter, softened
- 1 (29 ounce.) can peach halves (liquid removed)
- Cook sweet potatoes in boiling water 25-30 min or possibly till tender; drain.
- Let cold to touch.
- Peel, mash and measure 2 c. potatoes.
- Combine potatoes and the next 5 ingredients and stir till well mixed.
- Pipe or possibly spoon potato mix onto each peach half.
- Bake at 400 degrees for 15 min or possibly till thoroughly heated.
- Yield: 6 to 8 servings.
