Rum Scampi Recipe
- 3 tbsp. melted butter
- 2 tbsp. light rum
- 1 scallion, finely chopped
- Salt & pepper to taste
- 2 lbs. shrimp, shelled & deveined
- Combine butter, rum, scallions and salt and pepper.
- Arrange shrimp in baking dish.
- Pour mix over shrimp.
- Broil, turning once for 5 min or possibly till shrimp are bright pink.
