Tilapia Tacos
- 1-1/2 cups Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1-1/2 cups salsa
- 1-1/2 cups Kraft Calorie-Wise Zesty Italian Dressing
- 24 each tilapia fillets (4 oz./115 g each)
- 48 each small whole wheat tortillas
- 6 qt. iceberg lettuce, shredded
- 1-1/2 qt. tomatoes, chopped
- 3 cups canned no-salt-added black beans, rinsed
- 1-1/2 cups red onions, finely chopped
- 1-1/2 cups fresh cilantro, finely chopped
- Mix Miracle Whip and salsa until blended.
- Refrigerate until ready to use.
- Pour Italian dressing over fish in shallow dish; turn to coat both sides of each fillet.
- Refrigerate 20 min.
- to marinate.
- Remove fish from marinade; discard marinade.
- For each serving: Place 1 fish fillet on rack of broiler pan sprayed lightly with cooking spray.
- Broil, 3 inches from heat, 8 to 10 min.
- or until fish flakes easily with fork.
- Cut fish in half.
- Cover each of 2 tortillas with 1/2 cup (125 mL) lettuce, 2 Tbsp.
- (30 mL) tomatoes, 1 Tbsp.
- (15 mL) beans, 1/2 Tbsp.
- (7 mL) each onions and cilantro, and 1 Tbsp.
- (15 mL) salsa mixture.
- Top with fish.
