Blackcurrant Ice Cream Recipe
- 250 gm Blackcurrants, (8oz)
- 3 Tbsp. Orange juice
- 75 gm Icing sugar, sifted (3oz)
- 284 ml Whipping cream, (1/2 pint) Blackcurrants and whipped cream to decorate

- Puree the blackcurrants and orange juice, then stir in the icing sugar.
- 2.
- Whip the cream till fairly thick and fold into the blackcurrant mix.
- 3.
- Spoon the mix into a 500g(1lb) loaf tin.
- Cover with clingfilm or possibly foil and freeze till hard.
- 4.
- Turn out onto a plate and decorate with blackcurrant and whipped cream before serving.
- Redcurrants or possibly blackcurrants may be used in this recipe.
- NOTES : Deliciously refreshing dessert for a special summer meal.
