Just-Add-Water Instant Grits with Coconut and Cherries

  1. Special equipment: an 8-ounce lidded heat-safe container
  2. Put the grits, coconut milk, cherries, pistachios, brown sugar, cardamom and ginger in the container.
  3. Secure the lid, and refrigerate up to overnight.
  4. When ready to eat, add 1/2 cup boiling water, stir gently and cover until the grits are tender and creamy and the cherries have plumped up, about 2 minutes.
  5. Stir again, and eat warm.
