Green Chili enchiladas
- 1 lb ground beef
- 1 can green enchilada sauce
- 1 can diced green chilis
- 1 can jumbo blk olives
- 8 oz pkg cheese/mixed
- 1 dozen corn tortillas
- 1 oil for frying tortillas
- 1 can refried beans/or make your own :)
- preheat oven to 350F
- brown ground beef in pan, drain fat off
- add taco seasoning and beans, cook until hot
- add half the diced green chilies, reserve rest for sauce
- pour 1/3 of enchilada sauce in baking dish
- start to fry tortillas, let them turn a little color, don't over cook.
- Let the oil drain off.
- take each tortilla and place beef/bean ing.
- in middle roll like a little burrito, set in baking pan on the green sauce.
- Continue until all 12 tortillas are in baking pan.
- mix the reserved chilies with the rest of the sauce, pour over the enchiladas
- cover the enchiladas with cheese and chopped olives, place in oven for 35 minutes, or until cheese has started to brown and bubble around the sides
- enjoy, mouth watering :)
