Green Chili enchiladas

  1. preheat oven to 350F
  2. brown ground beef in pan, drain fat off
  3. add taco seasoning and beans, cook until hot
  4. add half the diced green chilies, reserve rest for sauce
  5. pour 1/3 of enchilada sauce in baking dish
  6. start to fry tortillas, let them turn a little color, don't over cook.
  7. Let the oil drain off.
  8. take each tortilla and place beef/bean ing.
  9. in middle roll like a little burrito, set in baking pan on the green sauce.
  10. Continue until all 12 tortillas are in baking pan.
  11. mix the reserved chilies with the rest of the sauce, pour over the enchiladas
  12. cover the enchiladas with cheese and chopped olives, place in oven for 35 minutes, or until cheese has started to brown and bubble around the sides
  13. enjoy, mouth watering :)
