Louisiana Red Velvet Cheesecake Bars

  1. Heat oven to 350 degrees F.
  2. Mix cookie crumbs and butter; press onto bottom of 13x9-inch pan sprayed with cooking spray.
  3. Melt 4 oz.
  4. chocolate as directed on package; place in medium bowl.
  5. Set aside.
  6. Beat cream cheese, sugar and vanilla with mixer until blended.
  7. Add eggs; beat just until blended.
  8. Remove 2 cups batter; mix with melted chocolate and food coloring.
  9. Carefully spread over crust; cover with remaining plain batter.
  10. Bake 26 to 28 min.
  11. or until center is almost set.
  12. Cool completely.
  13. Melt remaining chocolate; drizzle over dessert.
  14. Refrigerate 4 hours.
