Asparagus Marco Polo Recipe

  1. Cut off the tough stems of the asparagus.
  2. If you wish, peel the stems partway up with a vegetable peeler.
  3. Cut the asparagus into pcs about 1/2 inch thick, on a sharp diagonal.
  4. Heat the oil in a skillet.
  5. Add in the ginger and cook for a few seconds till fragrant.
  6. Add in the asparagus, sprinkle with the salt and toss with the oil.
  7. Cook for 1 to 2 min.
  8. Add in the sugar, toss, cover and cook for 2 to 3 min.
  9. Add in the lemon juice.
  10. Toss well and serve.
  11. Yield: 4 to 6 servings.
