Hoppin' John, My Way
- 1 lb black-eyed peas, frozen
- 1 yellow sweet onion, diced fine
- 2 garlic cloves, minced
- 14 cup canola oil
- 4 slices bacon, diced
- 2 (14 1/2 ounce) cans diced tomatoes
- 2 cups chicken stock
- 1 dried bay leaf
- 14 teaspoon white sugar
- 1 teaspoon seasoning salt, such as creole salt
- 1 teaspoon red pepper sauce, such as Tabasco
- 1 cup white rice, prepared
- In a dutch oven or stock pot, heat oil on medium high heat.
- Add onion and creole salt.
- Add bacon pieces.
- Cook till almost cooked, then add garlic.
- When vegetables are soft and bacon is fully cooked, pour in 2 cans tomatoes (with juice) and stir.
- Add frozen black eyed peas, stir.
- Add sugar, bay leaf, pepper sauce, and chicken stock.
- Cover and simmer for 1 hour, at least, then turn down to warm for another hour.
- Stir in rice, remove bay leaf and serve with corn bread!
