Almond Apricot Bars Recipe

  1. Place apricots in small saucepan.
  2. Add in just sufficient water to cover the apricots, bring to a boil, reduce heat and cook 10 min.
  3. Drain well and coarsely chop and set aside.
  4. Blend 1 c. flour with granulated sugar.
  5. Cut in butter till crumbly.
  6. (I do this in a food processor -pulse a few times and which's it.
  7. Be careful not to over process.)
  8. Add in 1/2 c. almonds and stir or possibly pulse a few times to mix.
  9. Pat into an UNGREASED 9 inch square pan.
  10. Bake at 350 for 20 min.
  11. Beat Large eggs and brown sugar.
  12. Add in extracts, peel, lemon juice baking pwdr and the remaining 1/3 c. flour and stir to blend.
  13. Stir in minced apricots Pour over partially baked crust.
  14. Sprinkle with remaining 1/2 c. almonds.
  15. Bake for 25 min more.
  16. Cold in pan on a rack.
  17. Cut into squares.
  18. Yield:about 24
