Chipotle-Peanut Pasta

  1. Cook pasta according to directions on box.
  2. Heat oil in pan, and saute garlic and onion for 2-3 minutes.
  3. Add carrots and bell pepper and saute a few more minutes.
  4. (For softer vegetables, toss them in with the pasta for the last 5 minutes).
  5. Add peanut butter, soy sauce, apple cider vinegar, chicken broth, ginger, lime juice, chipotle chilis, adobo sauce and honey.
  6. Turn down the heat and simmer for about 5 minutes.
  7. Add the pasta to the pan with the sauce and stir.
  8. If adding cilantro, mix in at this point.
  9. Top with peanuts and/or green onions and serve.
  10. Enjoy!
