Cannoli Cream Parfaits
- 1 cup POLLY-O Original Ricotta Cheese
- 1/4 cup powdered sugar
- 1 tsp. grated orange zest
- 2 Tbsp. orange juice
- 1/2 cup thawed COOL WHIP Whipped Topping
- 2 Tbsp. miniature semi-sweet chocolate chips
- 2 Tbsp. chopped dried apricots
- 2 Tbsp. raisins
- 24 vanilla wafers, quartered
- Mix ricotta cheese, sugar, orange zest and juice in large bowl until well blended.
- Add whipped topping, chocolate chips, apricots and raisins; stir gently until well blended.
- Cover.
- Refrigerate at least 1 hour or up to 6 hours.
- Layer one half each of the cheese mixture and wafers in four dessert dishes; repeat layers.
