Beer Battered Shrimp Tacos with Cilantro Lime Dressing
- 2 Tablespoons Lime Juice
- 2 Tablespoons White Wine Vinegar
- 1 teaspoon Sugar
- 1/4 teaspoons Salt
- 2 cloves Garlic
- 1/4 cups Vegetable Oil
- 1/4 cups Cilantro
- 3/4 cups Flour
- 23 cups Beer
- 1 whole Egg
- 1- 1/2 teaspoon Baking Powder
- 1/4 teaspoons Salt And Pepper
- 1/2 pounds Shrimp
- 1/2 cups Vegetable Oil
- 1 whole Tomatoes
- 1 whole Avocado
- 6 whole Corn Tortillas
- 1 cup Cabbage
- For the dressing: Blend together lime juice, white wine vinegar, sugar, salt and garlic.
- Drizzle oil in while blending.
- Add cilantro and pulse blender a few times to break down cilantro just enough to hold some texture.
- For the shrimp: Stir together flour, beer, egg, baking powder and salt and pepper.
- Remove shells from shrimp.
- Heat the oil in a skillet.
- Fry shrimp until golden on both sides.
- Remove and drain on paper towels then season with salt.
- For the filling: Dice tomato, slice avocado.
- Cook corn tortillas over flame on a gas stove until slightly charred on both sides.
- Build tacos with cabbage, tomato, avocado, shrimp and then a drizzle of cilantro lime dressing.
- Enjoy!
