Tomato Genoa Pasta
- 5 ounces genoa salami, chopped
- 2 large plum tomatoes, chopped
- 1 small onion, chopped
- 2 -3 garlic cloves, minced
- 14 cup olive oil
- 12 cup fresh basil
- 4 ounces frozen spinach, thawed
- 14-12 teaspoon dried chili
- 450 g pasta
- sea salt
- pour oil into pan and bring up to temperature over med-low heat.
- add tomatoes and saute until soft.
- add remaining ingredients, except spinach.
- once onion is transparent and majority of liquid is evaporated and the spinach heat through and set aside.
- drain pasta and mix with tomato/genoa mixture.
- You can top with Romano or Parmesan Cheese if desired(we used Romano).
