Creamy Quinoa Salad with Kale, Apple and Bacon
- 2 cups loosely packed thinly sliced stemmed fresh kale
- 1/4 cup Heinz Apple Cider Vinegar
- 2 cups cooked quinoa, cooled
- 6 slices bacon, cooked, crumbled
- 1 apple, chopped
- 1 stalk celery, sliced
- 1/3 cup Renee's Classic Ranch Dressing
- 1/4 cup apple juice
- 1/3 cup chopped pecans
- Toss kale with vinegar in large bowl; let stand 15 min.
- to soften slightly.
- Add quinoa, bacon, apple and celery to kale mixture; mix lightly.
- Mix dressing and apple juice until blended.
- Add to salad; toss until evenly coated.
- Sprinkle with nuts.
