Garlic and Hot-Pepper Almonds

  1. In a large skillet over moderate heat, heat olive oil and butter.
  2. When
  3. butter foams, add garlic and stir until fragrant.
  4. Add pepper flakes and
  5. stir an additional 15 seconds.
  6. Add almonds and stir continuously until
  7. nuts are well coated and lightly toasted.
  8. Season with salt.
  9. Drain nuts on
  10. paper towels and let cool.
  11. Serve cool, but not cold.
