Scalloped Potatoes With Pork Chops
- 6 pork chops, cut 1/2-inch thick
- 2 Tbsp. cooking oil
- salt
- pepper
- 3 Tbsp. butter or margarine
- 3 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. instant chicken bouillon or 2 chicken bouillon cubes
- 2 c. water
- 6 c. sliced, pared potatoes
- 1 medium onion, sliced and separated into rings
- Brown pork chops on both sides in hot oil in 12-inch skillet. Sprinkle with salt and pepper to taste.
- Meanwhile, melt margarine in saucepan.
- Stir in flour, salt, pepper, chicken bouillon and water.
- Cook and stir over medium heat until mixture comes to a boil.
- Place potatoes in bottom of 8 x 12-inch baking dish.
- Top with onion rings.
- Pour chicken broth mixture evenly over potatoes and onions.
- Top with pork chops.
- Cover with foil and bake in preheated oven at 350u0b0 for 1 hour.
- Remove foil and continue baking 30 minutes or until meat is tender.
