Honey Pecan Snaps
- 12 cup butter or 12 cup margarine, softened
- 12 cup shortening
- 1 12 cups sugar
- 12 cup honey
- 2 eggs
- 2 tablespoons lemon juice
- 4 cups all-purpose flour
- 2 12 teaspoons baking soda
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 12 teaspoon ground ginger
- 12 teaspoon salt
- 1 cup chopped pecans
- additional sugar
- In a mixing bowl, cream butter, shortening and sugar until fluffy.
- Add honey, eggs and lemon juice; beat well.
- Combine dry ingredients; gradually add to creamed mixture.
- Fold in pecans.
- Shape into 1-inch balls; roll in sugar.
- Place on un-greased baking sheets.
- Bake at 350 degrees for 12-13 minutes or until golden brown.
- Cool 2 minutes; remove to wire racks.
