Greek Wraps and White Bean Spread
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 2 sprigs fresh rosemary
- 1 garlic clove
- olive oil
- 2 tomatoes
- 14 seedless cucumber
- 14 cup red onion, chopped
- 13 cup kalamata olive
- flat leaf parsley
- 14 cup lemon juice
- 4 pita bread or 4 tortillas
- feta cheese
- Combine beans, rosemary, galic, olive oil and salt and pepper in a food processor.
- Pulse until smooth.
- Combine tomatoes, cumcumber, onion, olives, parsley, and lemon juice in a bowl.
- Drizzle with olive oil and season with salt and pepper.
- Warm pitas or tortillas.
- Spread with bean spread and top with a layer of the Greek salad.
- Top with feta.
- Fold up and enjoy.
