Vegetarian chilli
- 1 onion
- 1 red pepper
- 1 green pepper
- 1 can crushed tomato
- 1 medium carrot
- 2 stalks of celery
- 1 tbsp fresh ginger
- 3 clove garlic
- 1/2 tsp chipotle chilli powder
- 2 bay leaves
- 1/2 cinnamon stick
- 2 tsp paprika, ground cumin, coriander
- 1 tsp dried thyme, basil, oregano
- 1 cup frozen or fresh corn
- 1/2 cup minced parsley or cilantro
- 2 tbsp soy sauce
- 3 can kidney and black beans
- 1 can 6 oz tomato paste
- 2 tbsp olive oil
- 1 cup bulgar or cracked wheat
- 1 jalapeno
- turn 8-10 qt crackpot on high
- add cooked beans, water, bulgar, tomato paste, bay leaves, and cinnamon stick to the crockpot
- after sauteing the veggies & spices, transfer then to the crockpot
- reduce heat to low, cover and cook 4-6 hrs
- add corn, minced parsley, soy sauce .
- cook and cover for another 1/2 hr on high heat
