Traditional German Flammkuchen
- 1 cup Warm Water
- 1 package Active Dry Yeast, 0.25 Ounce Packet
- 1 pinch Sugar
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Salt
- 2- 1/2 cups All-purpose Flour Plus Extra For Flouring Your Work Surface
- 1 package Creme Fraiche (6 Oz)
- 1 pinch Pepper
- 1 cup Chopped Ham
- 1/2 cups Thinly Sliced, White Onion
- 1/4 cups Mozzarella Cheese
- 1.
- Add water, yeast and a pinch of sugar into a large bowl and let the mixture stand for 10 minutes.

- Then add olive oil, salt and flour a little at a time and mix with a fork or using a KitchenAid standalone mixer.
- Mix until you reach a dough consistency.

- Put the dough onto a floured surface and knead for 10 minutes.

- Cover the dough with a tea towel and let it rise for 1 hour.

- Preheat oven to 525 F. 6.
- Punch to deflate dough and roll it out on a floured surface.
- Transfer the dough to a greased pizza pan.
- 7.
- With a tablespoon, drop creme fraiche around the surface of the dough and smear it around to the edges.
- 8.
- Sprinkle pepper over the creme fraiche.
- 9.
- Add ham and onions, then top with mozzarella cheese.
- 10.
- Bake for 10-15 minutes.
- Be careful not to brown the top too much.
- Crust should be hard when done.
