Goat Cheese, Delicata Squash & Pomegranate Tartine

  1. Heat oven to 400 degrees F.
  2. Toss squash slices with olive oil and season with salt.
  3. Spread evenly onto a baking sheet and roast for about 20 minutes, turning once.
  4. Remove from heat and allow to cool.
  5. Toast bread (optional) and allow to cool slightly.
  6. Spread each slice with about 1 tablespoon of goat cheese, then top with roasted squash, micro arugula and pomegranate seeds.
  7. Season tartines with flaky sea salt just before serving.
