Roast Pork with Figs & Pears
- 1 pork tenderloin (1 lb./450 g), trimmed Safeway 1 lb For $3.99 thru 02/09
- 2 fresh pears, each cut lengthwise into 8 slices
- 1 red onion, cut into 16 wedges
- 1 clove garlic, minced
- 1/4 cup Kraft Extra Virgin Olive Oil Fig Balsamic Dressing
- Heat oven to 425 degrees F.
- Place meat in 13x9-inch baking dish sprayed with cooking spray,.
- Surround with pears, onions and garlic.
- Bake 25 min.
- or until meat is done (160 degrees F), drizzing with dressing the last 15 min.
- Transfer meat to cutting board; tent with foil.
- Let stand 10 min.
- before slicing.
- Serve with roasted pears and onions.
