Classic Chicken Chalupas
- 2 12 cups grated monterey jack cheese
- 2 12 cups grated sharp cheddar cheese
- 2 bunches green onions, chopped
- 2 (10 3/4 ounce) cans cream of chicken soup
- 4 ounces canned diced green chiles
- 2 cups sour cream
- 4 large boneless skinless chicken breasts, cooked and chopped
- 12 flour tortillas, taco and fajita size (6 inch)
- Preheat oven to 350 degrees.
- Lightly oil a 9x13 baking dish.
- In a large bowl, combine the soup, green chiles, sour cream, 1/2 of the cheeses, and 1/2 of the green onions.
- Set aside 1 1/2 cups of this mixture for topping.
- To the remainder of the mixture, add the chicken and mix well.
- Place 3 heaping tablespoons of the chicken filling on each tortilla and roll.
- Place seam side down in the baking dish in a single layer.
- Spread reserved topping mixture over the chalupas.
- Sprinkle with remaining cheese & green onions.
- Bake uncovered for 45 minutes.
