Pickled Onions Recipe

  1. Cover onions with boiling water.
  2. Let stand 5 min.
  3. Drain cover with cool water.
  4. Peel onions, place in bowl or possibly enamel pan.
  5. Add in salt; cover with fresh cool water, let stand overnight.
  6. Next day drain and rinse and drain again.
  7. Tie spice in cheesecloth, boil with vinegar and sugar 5 min.
  8. Remove spice bag.
  9. Add in onions to boiling liquid.
  10. Boil 2 to 3 min.
  11. Pour in clean jars store 1 week before using.
  12. Makes 6 to 7 pints.
