Easy Scampi Recipe
- 3/4 c. (1 1/2 sticks) unsalted butter
- 1/4 c. finely minced onion
- 3 to 4 garlic cloves, crushed
- 4 parsley sprigs, minced
- 1 pound uncooked med. shrimp, deveined
- 1/4 c. dry white wine
- 2 tbsp. fresh lemon juice
- Salt and pepper
- Heat butter in skillet over low heat.
- Add in onion, garlic, and parsley; saute/fry about 10 min.
- Add in shrimp and stir till pink.
- Remove shrimp and place in oven-proof dish.
- Cover lightly to keep hot.
- Add in wine and lemon juice to skillet and simmer about 2 to 3 min.
- Season to taste with salt and pepper; pour over shrimp.
