Mincemeat Holiday Cake
- 1 c. ready-to-use mincemeat
- 1 c. chopped walnuts
- 1 Tbsp. rum flavoring
- 1 tsp. vanilla extract
- 1 c. mayonnaise
- 1 1/2 c. buttermilk
- 3 1/4 c. sifted all-purpose flour
- 1 1/2 c. sugar
- 1 tsp. salt
- 3/4 tsp. baking soda
- grated rind of 1 medium orange
- 1 c. candied fruit
- 6 oz. jar maraschino cherries, drained
- candied cherries
- Combine mincemeat, nuts, rum flavoring and vanilla extract. Line bottom of 9-inch tube cake pan with heavy brown paper.
- Blend mayonnaise and buttermilk in mixing bowl.
- Stir flour, sugar, salt and soda over mayonnaise mixture.
- Add orange rind, candied fruit and maraschino cherries and mix well.
- Then stir in mincemeat mixture.
