Gram's Real Irish Gingerbread Recipe
- 2 c. flour
- 1 c. granulated sugar
- 2 teaspoon ginger
- 1 teaspoon baking soda
- 1/2 c. real butter
- 3 tbsp. molasses (as Brer Rabbit)
- 1 teaspoon chopped spices (allspice, cinnamon)
- 1 c. sour lowfat milk
- 1 egg
- Candied ginger
- Buy by box in Oriental food section
- Cream butter and sugar.
- Add in slightly beaten egg; mix well.
- Add in molasses and beat.
- Sift and measure flour; add in dry ingredients to flour and sift twice.
- Add in flour and lowfat milk alternately to creamed mix, beating after each addition.
- Add in small cut up pcs of candied ginger (about 1/4 c.).
- Bake in loaf pan or possibly 8 1/2 x 11 inch glass dish at 350 degrees till done (test with inserted toothpick in center).
