Luxury Peach 75

  1. Tear 1 tarragon sprig and drop it into a cocktail shaker.
  2. Add ice and the gin, Cognac, lemon juice, peach puree and simple syrup and shake well.
  3. Fine-strain into a chilled coupe.
  4. Top with the Champagne and garnish with the remaining tarragon sprig.
