Crunchy Roast Beef Scoops
- 18 pounds Deli Roast Beef
- 1 Tomato
- 6 slices Provolone Cheese
- 1 bag (about 10 Oz. Size) Scoops Chips
- 4 Tablespoons Mustard
- 2 Tablespoons Parsley Flakes
- Chop roast beef, dice tomato and cut 1/4-inch strips of provolone to fit inside corn chip scoops.
- Fill scoops with chopped roast beef.
- Criss cross roast beef with 2 strips of provolone.
- Top provolone with diced tomatoes.
- Garnish with a dollop of mustard and a sprinkle of parsley.
