Crunchy Roast Beef Scoops

  1. Chop roast beef, dice tomato and cut 1/4-inch strips of provolone to fit inside corn chip scoops.
  2. Fill scoops with chopped roast beef.
  3. Criss cross roast beef with 2 strips of provolone.
  4. Top provolone with diced tomatoes.
  5. Garnish with a dollop of mustard and a sprinkle of parsley.
