Dessert Lovers Sweet Rice

  1. Pour 4 cups of water and 1/2 tsp.
  2. of salt in a skillet.
  3. Add cinnamon sticks.
  4. Bring to a boil.
  5. Lower flame, add rice and stir well.
  6. Parboil rice until half cooked.
  7. Strain well.
  8. Keep aside.
  9. In a pot, heat ghee on medium flame.
  10. Add raisins, pistachios and almonds.
  11. Stir-fry for 2 minutes.
  12. Add sugar, food colour, pineapple essence and warm water.
  13. Stir until sugar dissolves.
  14. Add saffron and 1/2 to 1 tsp.
  15. of cardamom powder.
  16. Mix in the strained rice.
  17. Cover the pot with a lid.
  18. Cook on simmer for 10-15 minutes(your kitchen will smell wonderful while this is cooking!)
  19. or until the rice is dry and fluffy, stirring every 5 minutes so that the rice does not stick to the bottom of the pan.
  20. Transfer to a serving tray.
  21. Garnish with pineapple slices, if desired and serve.
