Peanut Butter Streusel Pie & Meringue Recipe
- 1/3 c. peanut butter
- 3/4 c. powdered sugar
- 1 (9 inch) pastry shell
- 1/3 c. flour
- 1/2 c. sugar
- 1/4 c. peanut butter
- 1/8 teaspoon salt
- 2 c. scalded lowfat milk
- 3 egg yolks, slightly beaten
- 2 tbsp. butter
- 1/2 teaspoon vanilla
- Blend peanut butter (1/3 c.) with powdered sugar till mealy.
- Sprinkle 2/3 of the mix into pie shell.
- Combine flour, sugar and salt in top of double boiler.
- Stir in lowfat milk.
- Cook over boiling water, stirring constantly, till thick.
- Stir small amount of filling into egg yolks.
- Combine with remaining warm mix and cook several min longer.
- Add in butter, vanilla and 1/4 c. peanut butter.
- Pour into pie shell.
