Avocado And Crabmeat Soup Recipe
- 4 x avocados, peeled & seeded
- 1 x (8 ounce.) can of crabmeat
- 1 x onion, minced very finely
- 4 Tbsp. butter
- 1 Tbsp. all purpose flour
- 1/2 tsp garlic pwdr
- 4 c. chicken stock
- 2 c. heavy cream Salt & pepper to taste
- Mash avocados and crabmeat.
- Saute/fry onion in butter.
- Add in flour, garlic pwdr, and chicken stock.
- Whip till smooth.
- Add in avocado and crab mix to the liquid.
- Simmer for 20 min.
- Add in cream and season to taste.
- Serve either warm or possibly very cool.
- NOTE: Lightcream may be substituted for heavy cream.
