Chicken and Quinoa
- 1 cup Quinoa, Rinsed And Drained
- 2 cups Chicken Broth
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 cups Chopped Sweet Onion
- 2 cloves Garlic, Minced
- 1 cup Frozen Sweet Peas
- 2 whole Cooked Chicken Breasts, Shredded
- 1 cup Spinach Leaves
- 1 whole Orange Bell Pepper, Chopped
- In a saucepan, combine the quinoa and chicken broth.
- Bring to a boil, reduce to simmer, cover and cook for 20 minutes.
- While the quinoa is cooking, heat the olive oil in a skillet over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 to 6 minutes.
- Add the peas, and continue cooking for another minute or two.
- Add the chicken and then the quinoa.
- Add the spinach and bell pepper, cooking for another minute or two.
- Serve immediately.
