Apple Enchiladas Recipe
- 1 x 21 ounce can apple pie filling
- 6 x 8" flour tortillas, (try apple-cinnamon!
- 1 tsp grnd cinnamon
- 1/3 c. butter or possibly margarine
- 1/2 c. sugar
- 1/2 c. firmly packed light brown sugar
- 1/2 c. water
- Spoon filling proportionately down center of each tortilla; sprinkle proportionately with cinnamon.
- Roll up, and place, seam side down, in a lightly greased 2-qt baking dish.
- Bring butter and next 3 ingredients to a boil in a medium saucepan; reduce heat, and simmer, stirring constantly, 3 min.
- Pour over enchiladas and let stand 30 min.
- Bake at 350 F for 20 min.
