Bacon, Lettuce, and Fried Green Tomato Sandwich
- 2 Tablespoons Oil
- 1 whole Medium Green Tomato, Sliced Into 8 Slices
- 1/2 cups Flour
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 8 strips Bacon, Cooked Crisp
- 8 slices Bread
- 4 Tablespoons Mayonnaise
- 4 whole Lettuce Leaves
- Heat oil over medium heat until oil is hot.
- Slice the tomato in slices that are thin enough to yield 6-8 slices.
- Pat dry with a paper towel.
- In a pie plate, mix the flour and salt and pepper.
- Dredge the tomato slices in the flour so that both sides are liberally covered.
- Place the tomato slices in the pan and brown until crispy on both sides.
- While you are cooking the tomatoes, cook the bacon slices in either the microwave or in another pan until they are crispy.
- Toast your bread.
- To assemble your sandwich, place the ingredients in this order: Take the mayonnaise and divide it into 1-tablespoon servings and spread on 4 slices of bread.
- Place 1 lettuce leaf, 2 fried green tomato slices, and 2 slices of bacon on those slices of bread.
- Top with the remaining slices of bread.
- Now dig in and enjoy.
- Makes 4 sandwiches.
