Friendship Cake
- 3 large eggs
- 2 1/2 cups sugar
- 1 teaspoon vanilla extract
- 1 teaspoon orange flavouring
- 1 teaspoon walnut extract
- 1 cup vegetable oil
- 3 1/2 cups flour, all-purpose
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup coconut flaked
- 1 cup dates chopped
- 1 1/2 cups fruit brandied
- Beat together eggs, sugar, vanilla, orange and butternut flavorings and oil.
- Stir together flour, baking soda, cinnamon, and salt.
- Add 1/4 cup flour mixture to the coconut mixture and reserve fruit from fruit starter and mix well.
- The batter will be stiff; it is too stiff to work, add more fruit or juice from the starter.
- Put into a greased and floured large tube or Bundt pan.
- Bake at 325 degrees for 1 hour and 15 minutes.
- Let cool in pan 15 minutes before removing.
