Sweet & Spicy Noodle Bowl
- 1 Tablespoon Vegetable Oil
- 1 pound Beef, Pork, Or Chicken, Sliced Into Thin Strips
- 1/2 whole Medium Zucchini, Grated
- 2 whole Carrots, Peeled And Grated
- 1/4 cups Sliced Onion
- 1 whole Red Bell Pepper, Thinly Sliced
- 1 whole Jalapeno, Seeded And Diced
- 1/2 cups Sweet And Sour Sauce
- 1/2 cups Sweet And Spicy Stir Fry Sauce (I Use President's Choice Brand General Tao Stirfry Sauce, But There Are Tons Of Good Options Out There)
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 13 cups Water
- 1/2 pounds, 2-58 ounces, weight Instant Noodles (often Called Chinese Noodles)
- Heat a frying pan over medium-high heat.
- Add oil and meat and cook until meat is almost cooked through.
- Add all vegetables and saute 3-5 minutes, until meat is thoroughly cooked and veggies are tender-crisp.
- Add the two sauces, salt, pepper and water.
- Stir and bring to a simmer.
- Remove from heat and stir in instant noodles (you want them to still have some crispness, and the mixture will be hot enough to soften them perfectly).
- This recipe is a great way to use up ends of vegetables in your fridge, and is also great with broccoli, snap peas, sprouts, etc.whatever you have on hand.
