Buddha's Benevolence Bowl

  1. Put first 8 ingredients in a large pot, roughly chopping the vegetables & boil for 1hour.
  2. Remove & strain all vegetables.
  3. These veggies are no longer needed, they were just to make the veggie stock.
  4. In separate pot boil noodles & set aside.
  5. Chop up mushrooms & mustard green & cook in veggie broth.
  6. Add noodles to bowl & ladle in broth with veggies & garnish with scallions
  7. Eat & enjoy
