South Carolina Red Rice
- 1/2 cup bulk sausage meat
- 1 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1 lb. canned tomatoes
- 1 can (6 oz.) tomato paste
- 1 dash hot pepper sauce,
- to taste
- 1 dash pepper
- 1/2 tsp. salt
- 1 cup uncooked rice
- 2 cups water
- Fry sausage until brown, breaking up meat with a fork.
- Add onion and bell pepper and cook additional three minutes.
- Add remaining ingredients; mix well.
- Cover and cook over low heat until rice is tender and liquid is absorbed.
