Beef-Rice Creole
- 1 lb. ground beef
- 1 Tbsp. flour
- 2 tsp. salt
- 1/2 medium green pepper (1/2 c.)
- 1 small onion (1/4 c.)
- 2 Tbsp. snipped parsley
- 1/4 tsp. pepper
- 1/8 tsp. red pepper sauce
- 1 clove garlic
- 1 bay leaf
- dash of ground thyme
- 1 1/2 c. water
- 1 can (8 oz.) whole tomatoes
- 1 1/2 c. uncooked rice
- Cook and stir ground beef in 10-inch skillet until brown; drain.
- Sprinkle beef with flour and salt.
- Stir in green pepper, onion, parsley, pepper, pepper sauce, garlic, bay leaf and thyme. Cook over low heat until onion is tender.
- Stir water and tomatoes (with liquid) into beef, break up tomatoes with fork.
- Heat to boiling.
- Reduce heat, cover and simmer 5 minutes.
- Add rice, remove from heat.
- Cover and let stand 5 minutes.
