Lemon Dill Chicken
- 1 packages boneless chicken tenderloins
- 1 lemon
- 2 tbsp minced garlic
- 1/3 cup chopped fresh dill
- 1 dash salt
- 1 dash pepper
- 1 tsp lemon herb spice (optional)
- 2 tbsp unsalted butter
- Preheat your oven to 350
- Foil a large baking sheet and spray with non stick cooking spray.
- Place the boneless tenderloins on the baking sheet leaving a little bit of space between each piece.
- Spread the minced garlic evenly over each piece of chicken
- Take your lemon and use a cheese grater to evenly sprinkle about half of the lemon rinds over the chicken
- Slice the lemon in half horizontally and squeeze the juice of one half evenly over chicken.
- Sprinkle desired amount of chopped fresh dill evenly over the chicken.
- If desired, also sprinkle a pinch of lemon herb spice over each piece.
- Cut then remaining half of the lemon into small wedges and place them randomly around the chicken.
- You can also throw some more fresh un-chopped dill around the pan.
- Bake for 30 minutes.
- Melt the butter and drizzle over the chicken if desired.
- Salt and pepper to taste and enjoy
